When I see my staff take a step back because I've lost my cool about something food-related, I say never apologize for your standards. If someone doesn't meet them, then you should explain that and that you want it changed. I want my staff to be like that, too.

I always think if you have to cook once, it should feed you twice. If you're going to make a big chicken and vegetable soup for lunch on Monday, you stick it in the refrigerator and it's also for Wednesday's dinner.
